DESCRIÇÃO DA EMPRESA: Signature cuisine restaurant focused on quality products, km0 and sustainability. We are located in the Mediterranean city of Denia, a city recognised by UNESCO as a city of gastronomy.
Our sole objective is to offer a pleasant experience to our diners, both organoleptically and sensorially, as we take care of every aspect from the first moment you walk through the door of our house.

This year we are especially happy with the work we have done, as we have been recommended by the Repsol guide, and this makes us very proud.

We enhance the flavours of each product, pampering and respecting it, following ancestral recipes; in our kitchen we do not work with an oven or grill, we develop our recipes taking advantage of the natural resources that the area offers us, such as the sun and the wind, which help us with the elaboration of our salted fish, we also make our own smoked products and most of our cooking is at low temperature in the rumner.

We offer a learning experience where the student can develop their creativity and acquire new knowledge about the combinations of products, flavours and textures; they will become part of a dynamic and cheerful team and our intention is that they develop all the tasks related to "mis en place", order and service to acquire and enjoy a complete experience.

REQUISITOS: We are looking for a person interested in learning creative signature cuisine techniques.

It is important that candidates are interested in gastronomy and agriculture as we specialise in seasonal and Km0 dishes.
RECOMENDAÇÕES: We value positively the previous obtaining of a food handling certificate, although you can obtain it during the internship.

TAREFAS:
  • Pré-preparação das matérias-primas para a preparação dos pratos da ementa.
  • Conhecer, assimilar e aplicar as directrizes de protecção para o cumprimento das normas de prevenção dos riscos profissionais.
  • Aprendizagem, assimilação e aplicação dos protocolos de cumprimento das regras de higiene e saúde.
  • Preparação de "mis en place" para o serviço.
  • Elaboração de receitas segundo técnicas ancestrais de preparação.
  • Conhecimento das matérias-primas sazonais locais (géneros alimentícios).
  • Preparação de pratos de assinatura, aprendendo a realçar os sabores de cada produto, mantendo o equilíbrio e a harmonia de cada preparação.
  • Participar com o chefe na cozinha para preparar os pratos para os nossos clientes, trabalhando de forma ordenada e limpa.
  • Improvisar pratos, se necessário, para satisfazer todas as necessidades dos nossos clientes. Aprenderá a resolver problemas durante o serviço.
