DESCRIPTION DE L’ENTREPRISE: Signature cuisine restaurant focused on quality products, km0 and sustainability. We are located in the Mediterranean city of Denia, a city recognised by UNESCO as a city of gastronomy.
Our sole objective is to offer a pleasant experience to our diners, both organoleptically and sensorially, as we take care of every aspect from the first moment you walk through the door of our house.

This year we are especially happy with the work we have done, as we have been recommended by the Repsol guide, and this makes us very proud.

We enhance the flavours of each product, pampering and respecting it, following ancestral recipes; in our kitchen we do not work with an oven or grill, we develop our recipes taking advantage of the natural resources that the area offers us, such as the sun and the wind, which help us with the elaboration of our salted fish, we also make our own smoked products and most of our cooking is at low temperature in the rumner.

We offer a learning experience where the student can develop their creativity and acquire new knowledge about the combinations of products, flavours and textures; they will become part of a dynamic and cheerful team and our intention is that they develop all the tasks related to "mis en place", order and service to acquire and enjoy a complete experience.

EXIGENCES: We are looking for a person interested in learning creative signature cuisine techniques.

It is important that candidates are interested in gastronomy and agriculture as we specialise in seasonal and Km0 dishes.
RECOMMANDATIONS: We value positively the previous obtaining of a food handling certificate, although you can obtain it during the internship.

TÂCHES:
  • Préparation des matières premières pour la préparation des plats du menu.
  • Apprendre, assimiler et appliquer les consignes de protection pour le respect de la réglementation en matière de prévention des risques professionnels.
  • Apprentissage, assimilation et application des protocoles de respect des règles de santé et d'hygiène.
  • Préparation des mises en place pour le service.
  • Élaboration de plats selon des techniques de préparation ancestrales.
  • Connaissance des matières premières saisonnières locales (aliments).
  • Préparation de plats signatures en apprenant à mettre en valeur les saveurs de chaque produit tout en maintenant l'équilibre et l'harmonie de chaque préparation.
  • Participer avec le chef en cuisine à la préparation des plats pour nos clients, en travaillant de manière ordonnée et propre.
  • Améliorer les plats, si nécessaire, pour répondre à tous les besoins de nos clients. Vous apprendrez à résoudre les problèmes pendant le service.
