SIGNATURE RESTAURANT KITCHEN ASSISTANT INTERNSHIP IN DENIA SPAIN

DESCRIPTION OF THE COMPANY: Signature cuisine restaurant focused on quality products, km0 and sustainability. We are located in the Mediterranean city of Denia, a city recognised by UNESCO as a city of gastronomy.
Our sole objective is to offer a pleasant experience to our diners, both organoleptically and sensorially, as we take care of every aspect from the first moment you walk through the door of our house.

This year we are especially happy with the work we have done, as we have been recommended by the Repsol guide, and this makes us very proud.

We enhance the flavours of each product, pampering and respecting it, following ancestral recipes; in our kitchen we do not work with an oven or grill, we develop our recipes taking advantage of the natural resources that the area offers us, such as the sun and the wind, which help us with the elaboration of our salted fish, we also make our own smoked products and most of our cooking is at low temperature in the rumner.

We offer a learning experience where the student can develop their creativity and acquire new knowledge about the combinations of products, flavours and textures; they will become part of a dynamic and cheerful team and our intention is that they develop all the tasks related to "mis en place", order and service to acquire and enjoy a complete experience.

REQUIREMENTS: We are looking for a person interested in learning creative signature cuisine techniques.

It is important that candidates are interested in gastronomy and agriculture as we specialise in seasonal and Km0 dishes.
RECOMMENDATIONS: We value positively the previous obtaining of a food handling certificate, although you can obtain it during the internship.

TASKS:
  • Pre-preparation of raw materials for the preparation of menu dishes.
  • Learning, assimilating and applying the protection guidelines for compliance with the regulations for the prevention of occupational hazards.
  • Learning, assimilating and applying the protocols for compliance with health and hygiene regulations.
  • Preparation of "mis en place" for service.
  • Development of recipes following ancestral preparation techniques.
  • Knowledge of local seasonal raw materials (food).
  • Preparation of signature dishes, learning to bring out the flavours of each product while maintaining the balance and harmony of each preparation.
  • Participate with the chef in the kitchen to prepare the dishes for our guests, working in an orderly and clean manner.
  • Improvising dishes, if necessary, to meet all the needs of our guests. You will learn how to solve problems during the service.
